Frutalose® SFP is derived from chicory inulin and is a highly soluble food ingredient with a high fiber content and sweet taste. It is a polydisperse mixture of linear fructose oligomers, partly ended by a glucose molecule, coupled through b(2-1) bonds. The degree of polymerization can be up to 10 units.
